Creole Brown Rice, Vegetarian Style

This recipe is an easy way to make a quick meal and can be coverted to non-vegetarian quick simply. It has all the good things in it and all the tastes one likes when thinking of "creole" food. You can make it hotter by adding more of the creole seasoning and the cayenne pepper. I serve it with a tossed salad and garlic bread sticks. My meat eaters even like it because the sausage substitute I use meets the taste and smell requirements for sausage.
