Maxam Cookware

The old adage "experience is the best teacher" is probably as true for cooking as it is for anything. Our Mennonite and Amish heritage has taught us to cook from scratch, without all the preservatives in our food. Cooking is an art. "All your life you keep learning new techniques and new ways of doing things, and you keep collecting new recipes. By the time you become a really good cook, it is then time to die."

Mimi's American Chop Suey

When I was little my mom made this recipe a lot. It was during World War II and it was very inexpensive to prepare. I loved it. I guess you would call it a comfort food for me as I was always so happy when I asked, "What's for supper" and Ma answered, "Chop Suey". She never called it "American Chop Suey" except on her recipe card. It was always "Chop Suey". I can't believe that I haven't posted this as I still make it often. I guess I figured it wasn't fancy enough and everyone knew about it, but because I don't want to lose it, I am posting it now. You will have most the ingredients in your pantry and freezer--there are only five plus salt and pepper. -- posted by Mimi in Maine

Ancient Harvesting History of Black Pepper - The Most Popular and Most Important Spice in History

Black pepper is undoubtedly the most popular and important spice in the world. The history of this spice can be traced back to ancient civilizations. The pepper plant itself is a perennial vine that has dark green leaves and small white flowers. These flowers become clusters of green berries, which is the product known as green peppercorns. Black peppercorns are the unripe berries that have been sun-dried, while white peppercorns are just black peppercorns with their outer skins rubbed off.

London's Borough Market Chocolate Brownies

Borough market brownie-maker Matt Jones shared his infamous dense chocolate brownie recipe on BBC Good Food, and I am posting it here for safe-keeping! For anyone who has tasted one of these brownies, the experience is sublime.......deep, intense and chewy brownies that are packed full of lucious chocolate! Borough Market is London's oldest food market, its origins date back from the time when the Romans built the original London Bridge. And, although it has moved from where it was originally established, Borough Market has occupied its current site for the last 250 years. You can find both food and non-food items in this market, but locals regularly go here to get fresh produce from various parts of the British Isles. One of the most popular foodie treats in the market, is the ostrich burger, as well as these delicious brownies. Makes 12 LARGE squidgy brownies. -- posted by French Tart

Catering Equipment - Not Just For the Kitchen

Caterers and restaurateurs are only too aware of the competitive nature of their business. Even relatively small towns tend to have a range of eateries for the public to choose from, and although these may represent different kinds of cuisine and dining, they are still competing for custom. Often the choices made by diners reflect the circumstances of the meal; they may be out for a birthday or anniversary celebration, entertaining business partners or just need a quick meal for convenience's sake.

Buy Your Seafood Only From the Best of Sources

Anyone trying to put together a healthy diet needs to control the sources of all the different food items that they consume on a regular basis. This is because not all food products are of the same quality: some come from pristine sources, whereas others are grown in contaminated environments and carry harmful ingredients in them that ought to be avoided at all cost. When it comes to seafood, a lot of products contain high levels of mercury or PCBs, in particular farmed fish and fish harvested in heavily polluted waters. Alaska's fisheries, on the other hand, are without a doubt the best environmental choice in seafood and provide high quality seafood products that are free of all the harmful chemicals found in other samples.
